How can this be 1080p.
Did they edit the show on 35mm film and then telecine it later?
Magnum was done like a movie back then. That means all the work was done on 35mm. And years later you can scan and restore it in High Resolution like movies.
Most big Universal TV Shows were shot and edited on Film in the early 80ies. They started editing on Video later in comparison with other studios.
For example:
Universals "Quantum Leap" Show with Scott Bakula was done completely (shot and edited and special effects work) on 35mm Film for its first three Seasons. That means its produced like a movie. Beginning with Season 4 it was still shot on 35mm but with post production (editing, special effects etc.) done on Video. So the Final Masters of Season 4 and 5 were SD Video. That means for the HD Rebuild of Seasons 4 and 5 of "Quantum Leap" Universal did a rebuild of the Show from the original 35mm Materials but upscaled all the Special Effects footage from SD Tape Masters.
That means Quantum Leap was done completely on 35mm till 1991 (End of Season 3).
Other Studios startet Editing on Video already in the mid 80ies. For Example: MacGyver had its first Season 1985 and altough it was shot on 35mm Film they edited only on Video from the beginning. That means the whole post production is done on video and the Final Masters were SD Tape Masters.
Thats why the HD Remaster of MacGyver was not a cheap one. They had to rebuild the whole Show from scratch.
Same thing happened with "Star Trek: The Next Generation"

That's assuming the original prints are even in decent condition, as film degrades over time.
Yes but thats why after scanning the 35mm Prints you have to restore them. Color Correction, Dirt/Scratch Removal and so on

Seems more likely they'd simply upscale the existing SD footage to "1080p," resulting in an image that is not truly 1080p in terms of detail.
Nope its not what they did with Magnum.
As a matter of fact Magnum is now already scanned/restored twice in high Resolution. The First Time it was done in 1080p. Those Masters were used for HDTV Broadcasts and the French and UK Blu Rays.
A couple of Years ago Universal rescanned Magnum in true 4K Resolution. Those Masters were used on the US Blu Ray Edition and the upcoming German Blu Rays.
Magnum never looked better.

The so-called AI upscaling algorithims
AI can never produce an image like a true High Definition or 4K Scan with proper Restoration can.
The Details an filmic look we get with the Magnum 4K Remasters are simply stunning.
